Shore Lunch Tortilla Soup Mix sounded yummy. On the back of the package, under Variations, they listed Tortilla Lime Chicken Roll-Ups. Since we love Mexican, we decided to try it!
My version:
3 pounds chicken breasts
6 cups water
soup mix
6 oz tomato paste
2 jalapenos, chopped
1/2 tsp habanero sauce
1/2 cup lime juice
1 onion
1 green pepper
1 tomato
tortilla shells
shredded cheese
In a large pot, boil chicken.
At the same time, boil water; whisk in soup mix. Add remaining ingredients. Simmer 20 minutes, stirring often. Set aside to cool.
Remove chicken from pot and shred. Return to pot.
Ladle COOLED mixture into blender in multiple batches and puree. Add puree to chicken, cover, stir and heat.
Scoop mixture into tortillas and top with cheese.
*** Results: I added 2 cups of water to the original recipe since I was added extra ingredients. I definitely didn't need that much water. I recommend starting with the suggested 4 cups and adding as you need it. Mine was a sloppy mess. BUT, the verdict on taste... thumbs up all around!
